Coffee kiosk concept hopes to compete

Entrepreneur works on franchise plans.

A growing Lake City franchise is looking to capitalize on a small idea in a big way, and has its sights set on Jacksonville for immediate expansion.

Ellianos Coffee Co., founded in 2002 by entrepreneur Scott Stewart and his wife, Pam, models its business on coffee “kiosks,” which don’t have in-house seating. Instead, every Ellianos location has a drive-through location on two sides of the building catering exclusively to coffee cravers on the go. Stewart said he believes it’s a unique niche in the specialty coffee market that has so far been underappreciated by bigger competitors such as Starbucks Coffee Co.
